Tossed together with a tangy citrus twist, this exotic salad promises a refreshing, light, and satisfying culinary escape that will transport your taste buds to an island paradise."
In a mixing bowl, combine the coconut oil, mixed spices, the juice of half the lemon, and a pinch of salt. Mix well.
Add the chicken thighs to the bowl with the marinade and coat them thoroughly. Cover the bowl and let the chicken marinate for at least 30 minutes, or ideally, refrigerate it for a few hours (or overnight) to enhance the flavours.
