This comforting dish is brought to life in a fragrant broth, served over your choice of soba or udon noodles, promising an authentic taste of Japan in every savoury spoonful.

Ingredients
  • 600 g of pork fillets (thinly sliced)
  • 2 cup of chicken broth (homemade or store-bought)
  • 400 g of mushrooms (sliced)
  • 1 cup of mixed vegetables (carrots, corns, snow peas, etc.)
  • 2 cup of bean sprouts
  • 1 can of mini corn (drained and rinsed)
  • 1 large onion (thinly sliced)
  • 1 medium head of broccoli (florets separated)
  • 2 tbsp of red miso paste
  • 1/2 cup of cooking wine (white wine or sake)
  • 5 garlic cloves (minced)
  • 30 g of ginger (minced)
  • 1 red chili pepper, (thinly sliced (adjust to your spice preference))
  • 1 pack of soba noodles or udon noodles
  • 2 bok choys (separated into leaves)
  • salt and paper (to taste)
Instructions
  1. In a large pot or deep skillet, heat some olive oil over medium-high heat. Add the minced garlic, minced ginger, and sliced onions. Sauté them until they become fragrant and the onions turn translucent.

  2. Add the thinly sliced pork to the pot and cook until it's no longer pink.

  3. Pour in 2 cups of water and let the mixture simmer for a few minutes to develop flavor.

  4. In a small bowl, combine the red miso paste with the cooking wine, stirring until well blended.

  5. Add the miso mixture to the pot and stir it into the pork and onion mixture.

  6. Add all the vegetables - mushrooms, mixed veggies, mini corns, broccoli florets, bean sprouts, and the chicken broth. Stir everything together.

  7. Allow the pot to simmer for 15-20 minutes, or until the vegetables are tender and the flavours have melded together, then add the bok choy leaves.

  8. While the pot is simmering, cook the soba or udon noodles according to the package instructions in a separate pot. Drain them and set them aside.

  9. Once the vegetables are tender and the soup has simmered to your satisfaction, you can adjust the seasoning.

  10. Serve the hot and flavourful soup over cooked noodles and garnish with sliced red chilli pepper for an extra kick.
