Ingredients
  • 4 arge chicken thighs
  • 4 medium potatoes (peeled and diced)
  • 2 medium carrots, (peeled and sliced)
  • 1 medium onion (finely chopped)
  • 6 garlic cloves (minced)
  • 30 g of ginger (minced)
  • 2 tbsp of coconut oil
  • 2 tbsp of mixed spices
  • 1 whole cauliflower (cut into florets)
  • 1 large zucchini (sliced)
  • 2 cup chicken bone broth
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)
Instructions
  1. Prepare the Ingredients:
    1. Preheat your oven to 325°F (165°C).
    2. In a small bowl, combine the mixed spices with a pinch of salt and pepper. Set aside.
    3. Heat the coconut oil in a large oven-safe skillet or roasting pan over medium-high heat on the stovetop.

    • Season the chicken thighs with a pinch of salt and pepper.
    • Sear the chicken thighs in the hot coconut oil until they are golden brown on both sides. Remove the chicken from the skillet and set aside.
