Instructions

  1. Prepare the marinade:

In a mixing bowl, combine the coconut oil,  mixed spices, the juice of half the lemon, and a pinch of salt. Mix well.

  2. Marinate the chicken:

Add the chicken thighs to the bowl with the marinade and coat them thoroughly. Cover the bowl and let the chicken marinate for at least 30 minutes, or ideally, refrigerate it for a few hours (or overnight) to enhance the flavours.

  3. Prepare the salad:

Wash and dry the mixed greens, then place them in a large salad bowl. Add the cubed mango, thinly sliced red onion, chopped cilantro, and torn basil leaves. Cut the remaining half of the lemon into wedges for serving.

  4. Cook the chicken:

Heat a grill or a skillet over medium-high heat. If using a skillet, add a bit of coconut oil to prevent sticking. Cook the marinated chicken thighs for about 5-6 minutes per side or until they are fully cooked and have a nice golden colour.

  5. Assemble the dish:

Once the chicken is cooked, let it rest for a minute, then slice it into strips or bite-sized pieces. Add the cooked chicken to the salad bowl on top of the mixed greens and mango.

  6. Serve with Coconut Turmeric Rice:

To make it a more substantial meal, you can serve the mango chicken salad with coconut Turmeric Rice

  7. Top the rice with the mango chicken salad:

Spoon the mango chicken salad generously over the rice on each plate or bowl. The flavourful chicken and mango mixture will complement the rice wonderfully.

  8. Garnish and enjoy:

If desired, garnish the rice and salad with extra cilantro, basil leaves, and a squeeze of lemon juice for added freshness. For added flavour, you can drizzle some mint salad dressing.

Serve immediately and enjoy your delicious mango chicken salad with rice!

Frequently Asked Questions

Expand All:
Can I use chicken breasts instead of chicken thighs for this recipe?

Yes, you can use chicken breasts if you prefer. However, keep in mind that chicken thighs tend to be juicier and more flavourful.

Can I make the salad in advance?

While the chicken is best when served fresh, you can prepare the salad ingredients in advance and store them separately. Assemble the salad just before serving to maintain its freshness.

Can I adjust the level of spiciness in the salad?

Absolutely! You can control the spiciness by adjusting the amount of red chilli used. If you prefer milder flavours, you can reduce or omit the chilli altogether.

Is there a vegetarian version of this recipe?

Yes, you can make a vegetarian version by replacing the chicken with grilled tofu or adding roasted chickpeas. The mango and herb combination will still provide a delightful tropical taste.

Can I substitute the mixed greens with a different type of salad base?

Certainly! You can use your favourite salad greens, such as arugula, baby spinach, or romaine lettuce, to personalise the salad according to your taste and preferences.
