  1. Preheat the oven to 180 degrees Celsius (fan-forced). Grease and line an 8x29cm rectangular loaf pan with baking paper, allowing the paper to overhang the long sides for easy removal.

  2. n a bowl, combine the extra virgin olive oil, sugar, lemon zest, lemon juice, vanilla bean paste, eggs, cinnamon, nutmeg, and 1 cup of Greek yogurt. Mix until well combined.

  3. Gradually add the self-raising flour and stir until the mixture is smooth.

  4. Gently fold in half of the blueberries.

  5. Pour the batter into the prepared pan and smooth the surface.

  6. Bake for about 55 minutes or until a skewer inserted in the centre comes out clean.

  7. Remove the loaf from the oven and let it stand in the pan for 5 minutes before turning it out onto a wire rack to cool.

  8. Serve the cooled loaf topped with the remaining Greek yogurt, the remaining blueberries, and drizzle with honey. Enjoy your delicious blueberry yogurt loaf!
