This chicken and chickpeas curry recipe combines tender chicken, hearty chickpeas, and a rich blend of aromatic spices.   1. In a bowl, marinate the diced chicken with salt, black pepper, curry powder, ground coriander, cumin, paprika, chilli powder (if using), mixed spices, and turmeric. Allow it to marinate for at least 20 minutes, or longer for more flavour.

  2. Heat some coconut oil or any other oil of your choice in a large skillet or pan over medium heat.

  3. Add the diced onion, minced garlic, and minced ginger to the pan. Sauté until the onion becomes translucent and the mixture becomes fragrant.

  4. in a separate bowl, add the washed and strained chickpeas and sprinkle some of the seasonings (such as salt, black pepper, curry powder, cumin, and paprika) over the chickpeas and mix well.

  5. For extra crispiness, you can transfer the seasoned chickpeas to a baking tray and roast them in a preheated oven at 180°C for about 10 minutes. This step is optional but adds a nice texture to the dish.

  6. Return the pan to the stovetop and add the marinated chicken. Stir-fry until the chicken is partially cooked and no longer pink on the outside.

  7. Add the diced tomatoes and the remaining seasonings to the pan. Stir everything together to coat the chicken and vegetables with the spices.

  8. Pour in a cup of water to create a sauce. Stir well and allow the curry to simmer for about 5 minutes, or until the chicken is cooked through and the flavours have melded together.

  9. Stir in the coconut cream, making sure it is well incorporated into the curry. Simmer for an additional 5 minutes to thicken the sauce slightly.

  10. Add the spinach to the pan and cook until it wilts down.

  11. Taste the curry and adjust the seasonings according to your preference. If desired, you can add more salt, spices, or chili powder to increase the heat.

  12. Once everything is cooked and well combined, remove the pan from the heat.
