This recipe features tender chicken marinated in delicious spices, sautéed in olive oil, and mixed with leftover grilled chicken and capsicum. The chicken is then tossed with protein-packed pasta and a creamy coconut and basil pesto sauce, creating a healthy and satisfying meal in just 45 minutes.

  1. In a mixing bowl, marinate the chicken tenderloin with the paprika, cinnamon, and salt for 20 minutes.

  2. In a large saucepan or medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic and sauté for 7 minutes until the onion is translucent.

  3. Add the chopped tomatoes, coconut cream, basil pesto, and cilantro to the saucepan and cook for another 5 minutes. Remove from heat and blend until smooth.
