Waffle batter

  1. Mix dry ingredients

    In a large mixing bowl, combine the almond flour, baking powder, salt, and cinnamon.

  2. Add in the wet ingredients

    Add the eggs, egg white, mascarpone cheese, almond milk, and maple syrup to the mixing bowl.

  3. Blend

    Blend the ingredients until smooth, using a food blender

  4. Rest
    Set the batter aside and let it rest for 10min

Caramelized bananas

  1. Caramelize the bananas

    While the batter is resting, slice the bananas and add them to a frying pan with butter and cinnamon. Fry for 3-5 minutes until caramelised and tender

Cook the Waffles and serve

  1. Preheat waffle-maker

    Preheat the waffle maker according to the manufacturer's instructions

  2. Pour in the batter
    Pour the batter into the waffle maker, following the manufacturer's instructions for the appropriate amount of batter per waffle, and cook until the waffles are golden brown and crispy.
  3. Bon appetit!
    Serve the waffles warm, topped with coconut yoghurt, caramelized bananas, blueberries and maple syrup.
